What is the technology proposed by CHoNova?

CHoNova is an analytical solution based on sensors for data collection and software for data interpretation. It reveals how chocolate behaves under real production conditions. It delivers real-time insights into the development and stability of chocolate structure, helping manufacturers better understand, control, and consistently reproduce their highest product quality.

The technology can be deployed on production lines — where we equip one mould with sensors — or used in the laboratory as a standalone device.

 

How can I implement CHoNova’s technology in my company?

There are two options:

  • On your production line. We equip one of your moulds with sensors. It runs through the cooling process alongside your other moulds, collecting data in real time and sending it to a user interface. Production applications include process setup and optimization, with unique insights into parameters such as cooling time, cooling temperature, airflow, and tempering.
  • In your laboratory. A 100g-plate mould is used to measure any chocolate or cocoa mass under authentic cooling conditions. A customized cooling unit replicates the temperature and airflow conditions of a production line. R&D applications include recipe reformulation, incoming batch testing, raw material quality control, root cause analysis, and new mould material assessment.

Can CHoNova’s technology be used without a mould?

Currently, the technology requires sensors to be installed on a mould (Smart Mould Technology).

If your products are not moulded, our laboratory device is a great fit: a 100g-plate mould equipped with sensors that measures any chocolate or cocoa mass under authentic cooling conditions, with a customized cooling unit that replicates production line conditions.

 

Do I have to equip every mould with sensors?

No. Only one mould in your entire set needs to be equipped. That single mould collects representative data for the whole production run.

CHoNova measures the ultrasonic signal passing between a transmitter and a receiver mounted on a chocolate-filled mould. This is complemented by additional data — temperature, humidity, position, acceleration, and more — that together capture how chocolate structure develops, going well beyond crystallization metrics. The technology tracks how chocolate responds to:

  • Thermal and humidity conditions
  • Mechanical treatments
  • Process stability and transitions

The result is a dynamic fingerprint of chocolate behavior.

 

Is CHoNova tied to specific equipment?

No. CHoNova is machine-agnostic and integrates seamlessly into existing production lines or any laboratory setup.
